Around four hundred neighboring smallholders bring their cherry here, and it's their fingerprints, farm by farm, that make up the pages of this cup.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eThis lot takes that same patience and turns it toward honey. After depulping, a thin veil of mucilage is left clinging to the parchment — just enough to carry sugar into the bean without the density of a red or black honey. At 1,900–2,100 meters the drying stays unhurried: ten to fourteen days on raised beds, turned by hand, watched closely so it stays golden rather than tipping into deeper, funkier territory.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eWhat lands in the cup is the fruit turned up a notch from its washed sibling.
