About This Coffee

High atop a ridge in Bombe at 2,300 meters above sea level, Nguisse Nare’s 10 hectare farm, Setame, sits at what feels like the edge of the sky. Coffee is intercropped with taro and sweet potato, reflecting a careful and quality driven approach to cultivation.

Nguisse purchased Setame four years ago with the intention of producing exceptional coffee. In addition to cherry from his own farms in Bombe, Kokose, and Tiburo, he works with roughly 60 neighboring outgrowers. During a recent visit, our importing partners toured the drying station with Thomas Tosha, the farm manager, and Demisse Turuma, the resident postharvest processing expert. The approach is patient and precise. Cherries are floated to remove defects, then dried slowly on raised beds for nearly twenty days.

That patience carries through in the cup. The extended drying preserves aromatics and structure, allowing the high elevation character of Bensa to show clearly. Floral, citrus driven, and vibrant, the coffee finishes clean and composed, reflecting Nguisse’s uncompromising focus on quality.

Coffee is best enjoyed at its peak, where its natural flavors and aromas shine brightest. Follow these simple tips to ensure every cup of Seekers Coffee is a perfect one:

1. Let It Rest

Freshly roasted coffee needs a little time to breathe. For optimal flavor, all roasted coffee beans to rest for 3–7 days after roasting to brew properly. This gives the coffee time to de-gas, enhancing its complexity and balance.

Lighter roasted coffees such as ours benefit from longer rest times, and stored well in an oxygen-free environment, can find giving peak flavors as late as 6-8 weeks after rest.

2. Store It Right


To preserve freshness:

• Keep coffee in an airtight container.

• Store it in a cool, dark place, away from light, heat, and moisture.

• If you choose to store in the freezer, make sure to seal properly, to prevent any moisture and odors from seeping into the beans.


3. Grind Fresh

Grind your coffee just before brewing to maintain its peak aroma and flavor. Use a burr grinder for consistent particle size, which leads to better extraction.

4. Use Clean Water

Water makes up 98% of your coffee, so its quality matters. Use filtered water heated to 195–205°F (90–96°C) for the best results.

5. Measure Precisely

For a balanced brew, use a coffee-to-water ratio of 1:16 (e.g., 15g of coffee for 240g of water). Adjust slightly to suit your taste.

6. Brew Mindfully

Choose a brewing method that matches your flavor preferences:

Pour-over: Clean, vibrant flavors.

Espresso: Concentrated sweetness and depth.

French Press: Full-bodied, rich profile.


7. Drink at the Right Time

Enjoy your coffee before 6-8 weeks after roast for peak flavor. After that, while it’s still drinkable, the complexity and brightness will begin to fade.

How should I store my coffee?

Storage is all about managing gas. Keeping it sealed to keep oxygen out and aromas in, while also giving it time to off-gas carbon dioxide. Optimal storage of your coffee is in an airtight container in a cool, dark place. Freezing is not an issue if sealed properly, as roasted coffee has very little water content, and can extend shelf-life well past the normal date.
